Goat skin (1993 Tunisia) Hides and skins, although sometimes forgotten during the slaughtering process, are the by-product most valued of animal slaughter. In the market they are noble materials, with very diverse applications, obtained from a powerful global industry, which have been partially replaced by other more “modern” and cheaper, but with less presence and useful life. The objective of this collection is to offer professionals, technicians and students of related degrees, an instrument of consultation, for teaching and continuing education. Based on communications presented to congresses and conferences, research articles and photos of the slaughter, the defects of hides and skins caused in the farm, the transport, the slaughter, the postmortem period and the tanning are mainly detailed and at the same time, recommendations are proposed to avoid its appearance.
